Pumpkin Bread with Raisins and Walnuts

- 1 (15 oz.) can of pumpkin puree
- 4 eggs
- 1 cup brown sugar
- 2 cups white sugar
- ½ cup vegetable oil
- ½ cup applesauce
- 3½ cups all-purpose flour
- 1½ teaspoon of vanilla
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon ground nutmeg (optional)
- 2 teaspoons baking soda
- ¾ teaspoon baking powder
- 1 cup chopped walnuts
- ½ cup raisins
- Preheat oven to 350 degrees. Grease and flour two large loaf pans.
- Combine all dry ingredients (flour, salt, baking powder, baking soda, cinnamon and nutmeg) in a small bowl.
- In a separate larger bowl mix together eggs, sugar, oil, applesauce, vanilla and pumpkin.
- Slowly add the flour mixture until all ingredients are thoroughly mixed together.
- Stir in raisins and walnuts.
- Bake at 350 degrees for 50 minutes and check for doneness. The bread is done when a clean toothpick inserted in center comes out clean.
This recipe makes two loaves. If using mini-loaf pans, decrease the temperature by 25 degrees and start checking for doneness at 30 minutes.
