BA-NA-NA. BA-nana? Ba.na.na!
Faye is starting to pick up new words. I am constantly repeating the names of objects in hopes that she might soon repeat what I say. It’s a slow process, but she is starting to show interest in word games and pointing out new objects. When she points to a correct object, there’s always lots of clapping. I had forgotten this about young toddlers. The clapping. Lots of clapping.
Faye might not be able to say the word banana today, but she sure knows what they are and how good they taste! And, even though she only had a small piece of this banana bread with cinnamon crumb topping, she LOVED it. (This isn’t the most photogenic photo of the Faye Monster, but I couldn’t help myself. I wanted to prove to you her LOVE for this bread.)
Every now and then, we end up with some overly-ripe bananas. This bread is the perfect use for them! There is a debate as to how many bananas make the perfect banana bread, but I think you can make a tasty bread with as little as 2 pretty large or 3 medium bananas. If you want more banana flavor, add more bah-NA-nas. Sorry. I am doing it again.
I added a cinnamon crumb topping because, well, why not. I thought it would be more difficult to make given the extra flair and flavor the topping provides, but it is really easy!

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup butter
- ¾ cup brown sugar
- 2 eggs, beaten
- 2-3 mashed overripe bananas
- ½ cup powdered sugar
- ½ cup all purpose flour
- 4 tablespoons unsalted butter, melted
- ½ teaspoon cinnamon
- pinch of salt
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a small bow, mix together butter and brown sugar until creamy. Stir in eggs and mashed bananas until well blended.
- In a large bowl, combine flour, baking soda and salt. Add dry mixture to banana mixture until just combined.
- Pour batter into prepared loaf pan.
- For the topping: Combine the powdered sugar, flour, cinnamon, salt and melted butter. Using your hands, crumble the mixture. Spread over uncooked banana bread batter in the loaf pan.
- Bake the loaf in preheated oven for about an hour, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
