Cranberries. I am a big fan.
Surprisingly, I don’t recall having them growing up. Cranberries are popular around Thanksgiving and Christmas, but they didn’t accompany my holiday meals.
In fact, cranberries entered my life when I was 19. I had just arrived in Australia as a college exchange student and a friend (who was an Australian) invited me for a boat ride with some of his “mates” in Sydney harbor on a beautiful February summer afternoon. When lunch time came, we docked and grabbed some “sangers” (sandwiches) from a beach cafe. It was my first introduction to turkey paired with cranberry. It was AMAZING.

I’ve never baked with cranberries, so when I discovered this recipe for chocolate chip and cranberry cookies, I was intrigued. Chocolate and cranberries. Why not?
I don’t keep desserts around the house, so I sent these with my husband to work one day. Mid-way through the day, I received this e-mail. “Subject: pls tell your wife. Message: As a connoisseur of all things edible – that cookie is no joke. Perfect execution. Just crunchy enough on outside, but still chewy. Well done.”
These are perfect no-fuss, easy bake cookies for Thanksgiving treats or office parties or cookie exchanges! I hope you love the cranberries as much as I do!
- ⅓ cup unsalted butter, softened to room temperature
- ½ cup packed light brown sugar
- ½ cup white sugar
- 1 tablespoon vanilla extract
- 1 large egg
- 1½ cups all-purpose flour
- 1½ teaspoons baking soda
- ½ teaspoon salt
- ¾ cup dried cranberries, chopped
- ¾ cup white chocolate chips
- Preheat the oven to 350 degrees.
- In a large bowl, beat softened butter, about 1 minute. Add sugars until well mixed. Beat in egg and vanilla.
- In a medium bowl, whisk together the flour, salt and baking soda.
- Gradually add the dry ingredients to the to butter mixture and mix well. Stir in dried cranberries and white chocolate chips.
- Drop even spoonfuls of the batter onto baking sheets coated with cooking spray.
- Bake for 12-15 minutes. Cool on pan for a few minutes before transferring to wire rack.
